Our family favorite recipe, the pork rinds provide such a marvelous flavour.
In a large bowl, mix all ingredients except the 2 tbsp of almond flour. Once the dough is formed add the 2 tbsp of almond flour and mix until it comes together.
Take a piece of dough and mold it into a ball using your palms and making a circular motion. Continue doing this until you have used all your dough.
Start making your tortillas using the Tortilla Press.
Place the tortilla on the comal or griddle (to verify if the comal or griddle is ready, sprinkle a few drops of water on it, if they sizzle it is ready, if not then wait a few more minutes.) The tortilla takes approximately 1 minute per side to cook. Turn the tortilla with a kitchen spatula.

LOW-CARB ALMOND FLOUR AND PORK RINDS TORTILLAS
Servings : 15 Tortillas
INGREDIENTS
2 cups almond flour
80 g. pork rinds (finely crushed).
2 tbsp psyllium husk
4 tsp baking powder
4 tsp xanthan gum
1 cup egg whites
2 tbsp almond flour (leave at the end)
INSTRUCTIONS
Pre-heat a comal or a flat griddle at low-medium temperature.
Prepare your Tortilla Press with 2 pre-cut Parchment Papers
